Slow Food Seder: San Francisco, CA, Co-sponsored by the Hazon Food Conference

On the second night of Passover, chefs Gayle Pirie and John Cook will prepare a special Slow Food Seder just for Heeb readers. Pirie and Clark have been at the forefront of the San Francisco restaurant scene for decades, with long-standing tenures at both Zuni Cafe and Chez Panisse. They spent nearly two years in Hong Kong developing two new restaurants, and have traveled widely in Europe and Asia researching locally produced and artisinal ingredients. In 2001 the duo took over the kitchen of Foreign Cinema and implemented an ever-changing Mediterranean influenced menu, earning the restaurant three stars from The San Francisco Chronicle and six consecutive "Top 100" rankings as well as rave reviews from the New York Times, Gourmet and Cosmopolitan.

 

The Slow Food Seder will play upon traditional Passover dishes, but will only be kosher by slow food standards. Following is a sample menu (please note, menu is subject to change slightly dependent upon the availability of produce at market):

 

Composed salad of Coke farm asparagus, Willey farm artichokes,with farm egg, wild arugula, herbed fromage blanc

Cardamom-orange roast chicken, cauliflower-potato hash with harissa & mint

 

Baked Northern halibut with roasted fennel, Meyer lemon, Picholine olive sauce, rosemary

 

Grilled cocoa nib bavette steak, broccoli rabe, grilled fingerling potatoes, horseradish
